 * I’m looking to have a minimum number of days booked change by the date range 
   being booked? Is there a way to do that? If not is there a way that I can extend
   the plugin without breaking update functionality?

 * You can add a rule for minimum booking but, at this time, this applies for the
   entire calendar and can’t be different for different periods of time.
 * You can make changes to the plugin and the update will still work but you will
   have to add the custom code back after each update.
