Different header text on each page, and move menu up

Oh WordPress, how do I hate thee.

1) Is there an EASY way – as in doesn’t require spending the next two weeks learning to code – that will SIMPLY let me change the header text on each page to something different?
2) How do you shrink the space between the header and the (horizontal) menu? i.e. reposition the menu further upward? I’d like the gallery to fill the page.

Using the Oria theme, but my last post on that theme page yielded no responses, and I’m guessing this is not necessarily a theme-centric question?

I have never, ever hated a program so much in my life. Really. Ever. I wish I could fling it from a high cliff and make it go away.
