First question I have is if you’re using CPTUI-Extended as well on this site, as I see the link above is pointed to your network admin url, and that’s not something we have in the free plugin alone.
When you visit the https://carniebratz.com/wp-admin/network/admin.php?page=cptui_listings do you still see the undesired items showing in the listing?
Hmm. Looks like some sort of javascript errors may be going on, upon initial hunches and viewing.
Is the same behavior going on when you’re in one of the single sites and adding a content type there? or is it just in the network admin area?
Also, just in case, did you open a separate ticket recently over on pluginize.com for some other help? Asking only because I realized my local has a lot of the same post types in the network admin as I’m seeing for you 😀

I did find where I’d submitted ticket. I’ll continue there.
