 * Can I control _when_ my posts are displayed (aside from hitting “Publish”)? It
   seems that I saw this function somewhere on the Dash.

 * Use the Edit button next to “Publish” in Admin/Posts/Edit to amend the publication
   date.

 * when you edit your post, just above the ‘publish’ button, there is a small ‘edit’
   on the right of the date. (WP 2.8)
