 * it could be possible to separately map the day, month and year of the CF7 date
   field to three different fields inside the PDF?

 * This would be possible to do with the planned special mail-tags support and the

   for more information. Unfortunately, this hasn’t been implemented yet. Let me
   see if I can get it prioritized.

 * I am working to release the feature that would allow you to map mail-tags to 
   PDF fields. This would allow you to do what you need with the [_format_date]
