Data Location Request

Hello,

I am trying to push changes from my staging site to live. When I push to live, I do not overwrite the posts or post_meta tables as not to overwrite applications and listings. However, when the push is complete, all new applications and job listings are still there as they should be, however the application ratings and job listing fields such as hours and location, are gone. Where in the DB are these changes made and stored? So that I may preserve these fields going forward.
