    on the front page, where the categories are shown, if you hover over a category, its white text on a white background.
    How and where do I change the text and background colours for these boxes?

    Hello,

    I think you might be using the BS5 setting for that theme, though it was built to use BS4, you can change it under WP Settings > AyeCode UI
    Though this is an old theme, you would be best using one of our new themes such as: https://en-gb.wordpress.org/themes/directory/

    I am using directory supreme theme which is a child of directory starter. Changing the bootstrap version did fix it.

    I tried using the theme you mentioned above, but it says “Version 3 of Directory theme has changed to be a block theme, this will require manual work to recreate your current layout. “

    And it didn;t work properly, images were not showing, short codes displaying etc

    what do I need to do to make it work?

    you need the blockstrap plugin installed also, you should see a notice if not installed. You want v3 the block theme.

    yes the blockstrap plugin was installed and its v3 of the theme.
