@mrlennyman, ‘Back up images’ is by default, turned on under Gallery > Other Options > Image Options to give you the ability to restore an image should you need to after watermarking or resizing. I would strongly recommend not uploading images larger than 1MB if you are not offering digital downloads. After you upload an image, you can always resize it under the ‘bulk actions’ settings when managing your galleries. https://www.imagely.com/docs/resizing-images/

So can I delete all the images from the backup without deleting the Gallery?
I do not need backups as I have them stored offline already,
I would like to clarify I can delete them and still keep the functioning Galleries before doing anything more!

@mrlennyman – You will need to delete the backup files from the server, under /wp-content/gallery/<gallery name>, but for peace of mind (this is how I approach anything I’m nervous about), create a full backup of your site (server files + database – I use UpdraftPlus plugin), and then just delete a few backup image files at a time until you can confirm for yourself that it’s working out OK for you.
You shouldn’t break any galleries by deleting the backup files (the file name will be something like ‘people.jpg_backup’) . The backup files are just that, a backup copy of your gallery images. But please, if you’re at all nervous, take my route of backing everything up just for peace of mind 🙂
