Creating a full post summary listing

How would I create a static page that contains an exhaustive listing of all postings on the blog? The Category lists don’t seem to work the way I want them to as they only seem to show the same number of posts as is specified in the Read Options setting for the blog. I’d like a way of showing everything available. Perhaps title and exerpt for each.
