You can use the Schema App Editor (view the demo) if you want to customize your markup for custom post types. In the editor, find the class you want to create data for your webpage, use the webpage URL in the pop-up and whatever is saved will be pulled into your website with the Plugin.
To create default markup for custom post types is difficult because of the variability, which would leave most of the mapping work (WordPress fields to Schema) up to the user.
