If I understand correctly, you do not want to show description in any of the videos in playlist. You will need to change code for this. And this will be applied to all playlist.
Go to file lib > core.php and function xml_playlist. Comment the line
$xml .= '<description>' . htmlspecialchars($desc) . '</description>';
Once done, go to gallery details screen and simply save gallery details inorder to update playlist xml file.

This will not be possible through this plugin. You might have to check JW Player documentation for customizing. Also note that the current one used in old JWPlayer. Next release will have latest JWPlayer and this might have more customization options.
