According to my Optin Cat stats we should have had new subscribers since installing the plugin, but this number is vastly different than the list size. (As in OC says we should have more than we actually do).

What would be the cause for this?

Hi,
The conversion number is actually related to the number of persons who clicked submit on your forms but they are only added to your Mailing List after they have click their confirmation email that is sent for each form submission.
