If the Gift Cards is a product type that can be selected from the dropdown in the Product Data section, you can choose to disable the AJAX add to cart for that product type.
If the gift cards are like extra fields added to products, you might want to disable our plugin to check it further to confirm.

There is no way to disable because the Gift Cards plugin does not create a new product type, it is just a checkbox on the product that enables the functionality. It will just be a variable product.

This plugin can work properly with the AJAX Add to Cart plugin. Buyers cannot add product to the cart without completing all the required extra fields.
The gift cards plugin is not just those fields you see in the screen shot but also a lot of backend functionality, so replacing with your Product Options plugin would not be an option.
The gift cards plugin already has form validation built in, it just gets bypassed by WPC Ajax add to cart.

Then for your case, you can consider an alternative to our AJAX plugin. This plugin is supposed to assist the add to cart button and might bypass some required fields from certain plugins. In order to investigate this, it’s very difficult from our side.
