 * Is it possible to set the update time? eg set for the middle of the night when
I know the site is hardly used.
 * I don’t want updates to be running when the site is actively being used

 * The [documentation for configuring automatic background updates](http://codex.wordpress.org/Configuring_Automatic_Background_Updates)
doesn’t show an option to do that.
