Will your plug-in work with the Non-profit version of Salesforce?
Can all Contact Form 7 fields be mapped to Salesforce?

Yes, as long as Web to Lead is enabled, the plugin will work.

This plugin has nothing to do with mapping Contact Form 7 fields to Salesforce… not sure what you’re after here?

Oh maybe I have the wrong plugin here. I am looking to map responses by individuals (ie. Name, address, “custom questions”) directly into SalesForce fields.

This is one other one that I am investigating:
