Collect extra information from Customer

Hello,

I sell jerseys on my site and I would like to ask customers if they would like to customize their jerseys. How do I collect that data using woocommerce, text and number.

Also I would like customers to enter email addresses if they would like to be notified when an out of stock item become available again.
