I canceled my cache and updated all wp files and plugin
Nevertheless, I noticed that the Coblock seems to work correctly on the back office side, while, when I split and I go to the URL page I see that the post category does not work and I see all the posts indifferently by the category settled!
Please check: It seems to be solved but it is not:
I cannot choose the categories, I cannot choose how many columns.
Considering that I’m using the Twenty Twenty theme, I think that the team who is working on Coblocks did not solve the issue

I just canceled the post and redo ex novo the coblock post grid view, selecting by categories, and now it is ok and it displays perfectly.
Maybe that the old post could not update correctly.

I just tested this with custom categories both in the editor and the front end and I cannot replicate what you describe. When I select a category then view the front-end, the site correctly shows the posts within that category. Similarly, I cannot replicate your report of being unable to use the column control for the posts block. I have tested this with WordPress 5.4 with Twenty Twenty theme. I’ll need more information to see what is going on.
Do you have an example URL that I could look at and see the front-end? What other plugins are active at the time of your testing? Get a look at my screenshots where I use columns and custom categories on the front-end.

Just those show the categories in action, here is the same page but with a different category filter applied. In this next screenshot please note the controls on the right. Since the post category contains only 2 posts, the column control is limited to 2 posts regardless of the feed settings.
