I checked you have created a link button type(With this type if you write the URL it will be redirect to you desirable link)
I think you need to create Button type read more, and that type will be expand the hidden content.
About your last question, i think you need to switch to the classic editor mode and wrappe your content into read more shortcode.

Another question: Is there a way to get more of the beginning of the table to appear? I cant figure out which display settings display more.
I tried putting the button inside the table, but that didnt work.
Not sure if that made sense, but if you look at the article I sent, you can see how the button doesnt really work (I mean its unclear because I cant increase the length of the area between the heading and the table.
