Just create English “translations” in en_US. It will be loaded just like any other translation when the site language is the default.
Ok so if the original source text of the plugin is English, and I create a new language translation as English, I can write there the strings that I want to overwrite in the original language?
And I can only change 2 or 3 strings, and the ones I leave blank will be shown using the original texts?

Yes, and yes.
It is exactly the same as translating into any language, except your translation file names end with “en_US.*”
Empty translations are absent from MO files and WordPress will fall back to the source text.

For example, here in the italian page the “scheduled” work remains in English even if there is the translation in Italian

or the translation of the price tells “Libero” even if in the translation it shoud be “gratuito”

on the other hand, there are English words that I can’t even translate, they don’t show on the list

I downloaded the .po file and there they are present but your plugin doesn’t see them
what is happening? how to fix all?

There is nothing kind about about demanding personal help.
The scope of support for my software is at my discretion, and my reasons for this particular type of problem being out of scope are the result of many years of maintaining this plugin.

That is 100% wrong and @simonemontrucchio you should completely uninstall this plugin and move on.

It’s still early for me so I apologize in advance for my directness. I have nothing to do with this plugin or any plugin. I am a forum moderator here on the wordpress.org forums.
All software on this site, from the core WordPress to this plugin, all plugins and all themes are 100% supported by volunteers for free and out of the goodness of their hearts and on their free time. That includes this plugin and the developer’s support.
There is no “scope” for this developer or any developer here. They do not owe you or anyone even a reply. Though it is good that they do but please set your expectations appropriately.
You and others are no one’s customer on this site. There are no customers here. This is not a “support ticket”. This is a support topic from an open source user. The words are important.
If the developer’s free, 100% volunteer and completely unpaid support is not working for you then move on. Uninstall the plugin. Find another plugin.
