For the first issue regarding the header, have you tried uploading this logo in the header media section instead of the header logo? You can find the settings for this by going to your Dashboard -> Appearance -> Customize -> Header -> Header Media. There upload the logo as the header image and check.
Regarding the second query, you can go to Customizer ▸ Header ▸ Primary Header and choose the third style option. It should place your menu in the center.

Hi Nidwija,
I was indeed successfull to center the header with this – not sure why I did not find it so far :). The problem now is that the image quality is not good enough for this size – can I reduce the size of the hider, while keeping in centered?
On the menu, I have seen that option, but the style of menu 1 fits much better, so would look to center that as opposed to chosing the third style option. Is that possible?

You can then remove the logo from the header media from your Dashboard -> Appearance -> Customize -> Header -> Header Media.
Then, upload the image again as the site logo by going to Customizing ▸ Header ▸ Site Identity. You can then choose the menu style 3, it should place your logo in the centre without compromising the quality, and also place the menu in the centre.
If you do not want the menu in the center but only the logo, then let me know and I will help accordingly.

At this point if we can recolor this menu style 3 to white buttons it’s already acceptable results, but if possible the preference would be to use menu style 1 centered, with a decreased header image size or centered logo image.

Menu 3 is the centred version for menu 1 and as for the text color there you can add the following CSS by going to your Dashboard-> Appearance -> Customizer -> Additional CSS and add the following CSS code there:

}
