The option to map data to post category is available in 5.1 version. You can see the Post Category option under Terms and Taxonomies group in the Mapping section.

Is there any chance you are using the WP Ultimate CSV Importer in the Multisite – Network? If you are, kindly Network Deactivate and the activate individually in your sites. You can see the Terms and Taxanomies tab under Mapping section.

I am facing another problem. I am using WordPress in Arabic (right to left language), and for some reason when I activate the plugin it messes up the horizontal panning of my control panel and everything on the right edge of my window gets cropped. I have only faced this problem with your plugin and when I deactivate the plugin everything goes back to normal.
