Cart66 – Layout and shipping issues

I am trying to install cart 66 on a site. Right now I have just 1 test product up. You can see it on this page:

First issue, is the layout. Some of these pages will have hundreds of products, and we’d like to have 3 or 4 across, instead of just one after the other, as shown. A basic employee needs to be able to get in and add and remove products, as well, without breaking anything. I know there has to be a solution for this, but I’m not sure what.
Secondly, I removed some of the payment pages that Cart66 installed because I felt they were confusing to the customer. At this point we are only really accepting PayPal anyway. We’d like to set up credit cards at some point, but for right now, we just want to make sure this is the right solution, before crossing that bridge. That being said, when I test the purchase, it’s not adding in the shipping as I have it set. It’s showing that it will be shipped UPS, but not adding in any shipping cost. Also, I don’t see any way to edit my cart. Once I have added an item, I can’t remove it.
Anybody use Cart66 and already made it across these hurdles?
