First of all, plugin prevents spam orders/registrations via WooCommerce, in some cases it protects against fraud, but only if submitter uses very toxic IP address.
To be sure, please check fraud IP/Email addresses here,

Are there any matches (any spam/security activity or “Purpose of use” is Public or Hosting) with your list of fraud IP addresses? If you see matches, please let us know, I think in this way we can implement additional protection in the plugin even if a submitter uses non toxic IP/Email.

176.65.0.150
158.140.103.115
176.65.0.217
I ended up installing reCaptcha v3 and the bloody thing blocked most of my legitamite credit card orders, got a heap of complaints from customers, so I have had to remove it, but now face Stripe cancelling my account as they have requested reCaptcha.
Is there anything else I can do through CleanTalk to help protect my woocommerce forms?

I have found that you have used old version of the plugin 5.123, may be this is a reason of missed fraud submission. As I see right now you use 5.127.3 there we have improved integration with WooCoommerce.
Have you got fraud issues and 5.127.3?
