    Probably not an issue, but kind of annoying for my testing purposes.

    If I subscribe using an email address, then I go into my mailchimp account and remove myself, I can no longer sign up using that email address. I get the “Oops. Something went wrong. Please try again later.” message

    Hi,

    That’s right. If you check the log on the MailChimp for WP > Other page to see the details of this “oops..” error it should be an error from MailChimp saying that this email is permanently deleted and not allowed to sign up again. This ban is set by MailChimp and there is no way around it for us.

    If you test with a gmail address you can add dots to your gmail username to generate “new” emails. e.g. user.name@gmail.com and u.sername@gmail.com and u.s.e.r.name@gmail.com will be seen as unique emails by MailChimp while gmail will ignore the dots.

    You can also use a free disposable email service to test.
