Old url (modified by another new one in the ecwid catalog) does not redirect to the new one nor do they have the canonical pointing to the new url created.

Thanks for the report.
Ecwid should put valid canonicals and redirect old links to the new ones when the URL is changed. So, what you described sounds like a bug. Can you provide an example of a URL where the canonical tag is incorrectly generated so we can replicate it ourselves and investigate?
For example:
Old url: https://www.mivestuariolaboral.com/GAFAS-SEGURIDAD-PARA-CASCOS-FUEGO-p44773278
New url: https://www.mivestuariolaboral.com/GAFAS-INCOLORAS-PARA-CASCOS-DE-OBRA-p44773278And there are many more with the same problem
Thanks. So, I inspected those pages. As far as I can see the URL #1 redirects to the new URL and the canonical tag of the page is as follows:
<link rel="canonical" href="https://www.mivestuariolaboral.com/GAFAS-INCOLORAS-PARA-CASCOS-DE-OBRA-p44773278" />
That seems correct. Do you see the same behavior? Can you describe what behavior you expect and why?
When i go to: site:mivestuariolaboral.com inurl:gafas at page 4 i see:

Then if i manually refresh the page, it redirect to: https://www.mivestuariolaboral.com/GAFAS-INCOLORAS-PARA-CASCOS-DE-OBRA-p44773278
Another example:
wrong url with canonical pointing to same url https://www.mivestuariolaboral.com/-p93871085
correct url: https://www.mivestuariolaboral.com/TAPONES-PARA-OIDO-CON-ARNES-BOLSA-DE-1-PAR-p93871085
This is another example, in this case a main category of the store.
This url is not correct: https://www.mivestuariolaboral.com/Vestuario+Laboral+Desechable-c11650009
but this: https://www.mivestuariolaboral.com/Vestuario-Laboral-Desechable-c11650009
However, the 2 urls have a different canonical, so Google will consider it duplicate content.
In fact, Google’s position rankings have fallen dramaticallyI would appreciate any indication. I am manually removing a lot of wrong urls from the google console that have been indexed and are duplicate pages.

I managed to replicate that. It seems like some links lead to the old pages on your site (e.g. https://www.mivestuariolaboral.com/gafas-de-seguridad/gafas-de-seguridad). Those pages redirect to the home page, but the Ecwid part of the URL doesn’t change for some reason. We will look into it.
The good news is that all of those pages have valid canonical URLs, as far as I can see, so Google will eventually re-index them with valid URLs.

This page has a valid canonical URL: https://www.mivestuariolaboral.com/TAPONES-PARA-OIDO-CON-ARNES-BOLSA-DE-1-PAR-p93871085 . So, as far as I can see, it works properly. Let me know if I miss anything here.
