Cannot change subject

I want to use ‘Cathedral Bookings’ as the subject for Contact Form 7 emails

I have left the FORM section unchanged as
<p>Subject
[text your-subject] </p>

I have typed CATHEDRAL BOOKINGS in the subject box in the MAIL section
I have saved the completed form

However, Contact Form 7 still shows a blank fill-in box for the subject.

What am I doing wrong?
