First of all: LOVE this theme!

Second: I am almost ready to launch my website go on air this friday 11th of April 2014, and sadly it is not until now, that I realize the benefits of setting up a child theme.

Can I do this at this late state without having to start all over? Or is it something you have to do from the beginning?
I have custom css both within the theme and in wordpress itself.

You can (& should) do it at any time.

As a Project Manager, the word RISK smacks me in the face if you are going live on Friday. So unless you have something specific that needs the CT then I’d recommend going live and then planning the CT implementation in the next release. You can then organise testing everything before you release.

Depending on what changes you have made, you need to consider:
    – moving all the Custom CSS code into a CT style.css, you can then use Custom CSS as a test area for any new CSS changes
    – hopefully, you’ve not changed any of the core Theme or WP .php files. If you have, then you’ll need to change your approach and make changes in the CT functions.php.
