The cache plugins saved what they see so your mobile system is not compatible with cache plugins I guess. If you check it with php, this is a common result.

I did delete, but the mobile version keeps loading for desktop browser to the extent that I have to keep checking and keep deleting the cached and minified CSS/JS

Did you check “Don’t show cache version to desktop” selection?
I haven’t because I thought that would make the plugin not work for desktop users?
Or would the plugin still work for desktop users?
If you don’t check it, mobile users see the desktop cache.
Emre, did you mean: “Don’t show cache version to desktop” or “Mobile: Don’t show the cached version for desktop to mobile devices”; coz I think the idea is to provide cache version to desktop visitors and not mobile visitors?
