Buying 1 item reduces stock to -1 even though there are 16 products in stock

I’m having a nightmare here that help would be appreciated with.

I have a variable product, a horse harness with 2 sizes, Full & Arab.

Full has 16 items in stock and Arab has 6.

The problem is when somebody buys 1 full size bridle, the item stock level goes to -1 instead of 15 and put’s the item out of stock.

I’ve tried everything, including deleting the product and starting from scratch again, but it is still the same.

I’m going to end up with a bald patch here I’m scratching my head so much, any ideas and suggestions please?
