We are not aware of any issues with variable products on the single product page.
But when you change the shipping on the cart page, the button actually disappears: https://github.com/woocommerce/woocommerce-paypal-payments/issues/288
There is a workaround for this bug, that’s why it hasn’t had the highest priority but it may not be the cleanest solution in every case (depends on the theme).
Anyway, as mentioned in the other thread, a link to your site would help us to better judge what’s happening on your single product page or the checkout page.
Sometimes, after saving the plugin settings, in particular, it can take a few seconds (usually around 3-5s, but I have seen cases where it took 20+s for the buttons to load). Improving the loading times is something we are looking into together with PayPal.

We have not heard back in this thread in a while, so I’m marking this thread as resolved.

This filter may require additional CSS for the right positioning.
