 * If I use Wp.org – will I still have the Dashboard type of system? I have been
   updating my Wp.com blogs using the Dashboard, and I want to know if Wp.org is
   the same.
 * I dont want to use Dreamweaver that’s why I’m asking.

 * It’s a different layout but it’s pretty much there. Since you don’t have access
   to the latest posts from wp.com, other sites are there instead.
