bbPress/buddypress customizations don’t work

As documented here, I’m trying to get all bbPress and buddypress pages to display without the sidebar. So I copied the file template-onecolumn.php twice and renamed the copies bbpress.php and buddypress.php. The What The File plugin confirms these PHP files are being used to generate the page, but the sidebar still shows up. I see all these different template files are all the same, apparently generating their contents including sidebar widget area by calling the_page. So what do I need to do to create my own template for bbpress that OVERRIDES the default formatting?
