This is the only plugin that really worked for me. Tried SB Welcome Email Editor, but it’s broken.

Better Notifications for WordPress has a really complete set of functions and configurations and a great documentation, and it’s really easy to use.

The only thing I would like to add, it’s a function to set a new sender email address for all notifications and for every notification. Right now I’m using WP Simple Mail Sender, which is pretty basic.
