 * Is is possible to automatically assign a category to posts?
    I am attempting 
   to create a “prayer wall” for a church site powered by WP. I would like anybody(
   guests, registered users, etc.) to be able to post a request and have the category“
   prayers” automatically assigned to the posts so that only those posts will be
   shown on a page of prayer requests. Also, is it possible to have ONLY this category
   automatically approved? Further, would there be a better way (ie: plugin, template,???)
   of accomplishing this feature?

 * Admin/Settings/Writing. You can define which category should be the default.
 * Auto-approval, however, is a very different matter. You may need to look for 
   a “shoutbox” or similar plugin to achieve that.

 * esmi, thank you for the response. However, I am not looking for a way of setting
   the default category. What I am needing is a way of automatically assigning a
   specific category to posts from a particular page and not to every post made 
   to the blog. The purpose being to allow the page to show only those posts in 
   the category “prayers”. THis category being auto assigned based upon the page
   so that visitors and non-blogger types would not need to choose a category. Perhaps
   the category could be pre-selected in the form some how. I am not certain how
