Regarding the second case, please note that currently that option is disabled by default, and we can not make changes to it.
Regarding Simple XLSX, there is not available column called options via which you can adjust options. Contrary to the other file types, Simple XLSX provides simple solution. Try using other file types such CSV, XLSX, and JSON.
Please note that you can not change default values given to the options with those file types as well.

I want to mention, that you are using a very old version of the plugin.
The latest update of the plugin is the 8.7.8 version.
Please note, that lots of changes have been made to the plugin during this time.
Some changes have been made for the imported file and some columns have been added to it.
You need to update the plugin to the latest version to check the case in that way.

I can fix it myself. The version I’m using now is custom made. The new version doesn’t have the same functionality. Since it cannot import what is written in MathJax. I tried the new version.
