Hi,
is it possible to make a addon for https://wordpress.org/plugins/login-with-ajax/
Or is there a simple solution by adding some code to the functions.php?

I use it in a modale popup like here https://15zine.cubellthemes.com/music/hip-hop/no-crop-featured-image/ > upper right corner icon next to search.

There is no need to create add-on for this. Just need to add some code in functions.php to save consent on login into form. Read the plugin to create a consent and then save that consent in wp_gdpr_consent db table after saving the login form.
