After recent update only one role can be slected for logged in users

We have various menus that are only visible to logged in users and we define the roles that may view them.
In one case three out of about twenty roles were previously defined as having access. Since the update, two out of the three are no longer shown and if I correct that and save the menu, the added roles do not stick.
I have deactivated ALL plugins except User Menus and have switched to the twenty twenty-one theme, but it makes no difference. I also updated WP core to 5.8 but that made no difference either.
