I use http://www.feedpress.it, where you can configure the mail to be send each week, each month or each time you add a new post. It’s so easy to set up. If you need help I can help you with it.
I use it in my blog if you need to see how is my feed and the email subscription.

My search and questions is related to the plugin Subscribe2 – and whether it is possible to include more posts / news in the mail within Subscribe2.
Do you have any experience with this certain plugin?

Subscribe2 can be configured to either send notifications for new posts immediately on publication or or on a periodic digest basis. It seems you are talking about the latter post type; this includes all posts made since the last notification was sent. You may be of the opinion that it only sends 1 item based on the preview email but the preview email is only an example to allow you to see what the email might look like, not a representation of the actual content.

As I read your answer it doesn´t seem possible to set the number of included posts in Subscribe2 – is that correct?

Correct. The plugin is not designed to work like that.
