Here is a solution for newcomers:

• First, configure the booking form to Add a product to cart (docs).

Then

• in order to redirect to cart, go to WooCommerce > Settings > Products tab > “Redirect to the cart page after successful addition”
• in order to redirect to any other page, go to Booking Activities > Booking forms > your form > go to the form settings (next to the “Add a field” button) > Redirect URL
