Length of excerpt

I’ve added:
<?php the_excerpt(); ?>
to the Loop ,,, but I’d like it to continue after MORE than the default 120 words. Where can i edit this setting? What file?

Also at the excerpt it has >>> to indicate continuation but only clicking the permalink title takes you there. Is there a setting that will automatically say “continue reading” or “more” and link to the full permalink?
