add text in meta data with special chars

Hi,
in insert some text in meta data with function update_post_meta() and add_post_meta().

But when in text is special char (“, ‘, /, \), they broke my page.

How fix this?
I add htmlspecialchars(): http://php.net/manual/en/function.htmlspecialchars.php, but this no fix my problem.
