Have you tried deactivating all plugins before attempting to update to 3.7?

If you don't currently have access to the dashboard, you can deactivate all plugins at once via FTP.

I do have access to the admin.
I have tried by de-activating all plugins (even as kismet) and tried 3 times, but it fails !
Do you have any ideas ?

Obviously, this is due to the PHP Timeout which is too low on the web host, whereas it worked good on previous versions of WordPress.

This is the error from log:

WARNING: [pool www] child 449, script '/srv/data/web/vhosts/DOMAIN_NAME/htdocs/wp-admin/update-core.php'
(request: "POST /wp-admin/update-core.php") execution timed out
    (235.492723 sec), terminating
