    I’m trying to put together a couple demo/test configurations of wordpress. I’d like them all to share the same data set, is this possible?

    You could simply export data from 1 site into all of the others. Or import the theme unit test data file into all of the sites. If you try to get them to share tables, they’ll have to all use the same theme etc. – which, I assume, would not be suitable for your purposes.
