Only display the first post in category archive

Try editing the page that controls your categories (either category.php, or archives.php), and add this just right after the beginning of the loop:

<?php static $count = 0;
if ($count == "n") { break; }
else { ?>

just replace “n” with the number of posts you want (in this case, 1).
