Email Users doesn’t save a a log or history. The best way to do this is CC your blog admin (or another user) on all email messages sent.

This method would work for notifications but not for user to user messages. To capture all of those messages, you would need to use the mail header filter to add the desired recipient to the BCC list (or something like that).
