    You can do exactly that. Just go to Dashboard -> Settings -> Document Gallery -> Thumbnail Management and set your icons. Or you can do it from the attachment edit dialog.

    I saw the upload option in the thumbnail management, but after the upload, nothing changed – no notifications of any sort, and I kept seeing errors in the log about image editor not being found

    If an image editor can’t be found then yes, uploads will fail since we resize at upload time to your configured thumb size. You need either DG or IMagick to be configured. This is a standard WP requirement and you’re going to have a number of more general issues if you don’t have that minimum requirement met.
