The colour can be set on the WP Catalogue Settings screen.
Or are you saying you did set it there but it is not reflecting on the front end?
I wonder if that fact that I have WooCommerce installed isn’t conflicting as I am having a lot of trouble setting this up.

Yeah there’s definitely something conflicting with it. To find out the culprit unfortunately you’ll have to deactivate all your other plugins and switch to the default theme for testing. Turn things on one by one, testing in between each time. At a certain point, it will break… telling you exactly where the culprit is…
