 * Make sure all files are uploaded, try to re-upload the files.

 * That sounds like some missing or corrupted files. I’d try to upload a fresh copy
   of the wp-includes folder.

 * Uploaded files again… no change. 🙁

 * Anyone else have a potential solution?

 * To be honest, I don’t think there is “another” solution. When the ‘undefined
   function’ error is displayed, it always means a missing or corrupted file, i.
   e. the file where the function is defined is not there, or has missing lines.
 * Files can get corrupted during the download, unzipping, upload etc.
    Fresh copy
   means a _new_ download, unzip…
 * Eventually, you can try a different FTP client, too.

 * I have deleted the entire site… and downloaded a fresh copy of 2.5… tried two
   different types of ftp clients… no change. I should have known better than to
   try the upgrade.
 * Unless someone can make sense as to why this is a problem, my suggestion to all
   is to not upgrade. The process is full chock-full of problems and it is anything
   but simple.
