Sure! If you add a custom menu you can link to whatever pages or categories you like.
Create a custom menu under Appearance > Menus, and assign it to the Primary Menu are in the theme.

I’m having the same issue. I’m fairly new so I don’t know if I understand how to assign my portfolio projects to the categories/sub menu that I create on the menu page.
Does it go:
Portfolio
>Illustration
>Photography
?

You will need to add Custom Links as a sub item to your custom menu.
The url structure for a portfolio category type is http://yourgroovysite.wordpress.com/project-type/project-type-slug/
Change “project-type-slug” to the name of your category. For instance, if your category name is “Illustration” the url will be: http://yourgroovysite.wordpress.com/project-type/illustration/
After you figure out the urls, then you can create the Custom Links and add them as sub items to your custom menu. Kathryn’s links above explain that process in detail.

Thanks for your response.
I’m afraid I’m still having issues. I don’t know how to assign my projects to a category. They are all in the Portfolio section now, but would like to offer sections to only show specific work in the submenus.
When I create a custom link for a project, the submenu goes to that project, and I want several to be shown, in the portfolio layout that they show as now.
Is this possible?

Once you assign several projects to a category, then you will see those projects within your specified sections.
In the dashboard, go to All Projects, and pick a project to Edit.
There is a Project Type area where you can Add and assign project types to a category.
I also noticed that your “Wedding” sublink is missing “project-type” in the url. It should be http://yourgroovysite.wordpress.com/project-type/wedding/
