Adding and outputting custom fields on images

I am trying to add some custom fields to images in the media library, and have tried various tutorials and plugins which create the field and save the content, but the main problem is how to then output the content again.

Ideally, I want to have a display come up on hover that shows credit, location date etc for a photo.
